Simple Vegan Blueberry Pancakes

WOW – these don’t mess around. Very easy and nothing even needs to be measured really. Packed with protein and fluffiness, and burning with deep blueberry fireworks.

Simply mix…

1 cup of whole wheat flour (or gluten free flour/ flour mix)

4 scoops of vanilla vegan protein powder

1 tsp. baking soda

2 tsp. cinnamon

a dash of salt

a splash of vanilla extract

1 cup + a few tablespoons of water (until the consistency is just right)

3/4 cup of blueberries

Then I use a pretty hot pan (but no teflon!!!!) and some coconut oil so that the ‘cakes don’t stick!
